I don't like the schemes generated by Tuist

Tuist defaults to generating schemes for convenience of the project definition. However, at some point that default might not align with your needs for schemes. In that case, we recommend to use Project.options to disable the generation of schemes, and use Project.schemes and Workspace.schemes to define them.

@Vijay: [Question] How do we determine which schemes are created from targets in a project generated by Tuist?
Referring to this scheme dropdown
Context: I see a lot of schemes being down (Bundles, Test schemes) which I would like to be hidden so that the dropdown is less noisy.
Or rather, I think the question should be:

Which schemes are created based on the targets available during the generation process?

@Pedro: You can use project options to configure a bit how things are automatically generated. If your needs deviate a lot from what the API allows, I recommend you that you disable the generation of schemes automatically and that you take control by declaring the schemes yourself directly at the project or the workspace level.
